Easy Ground Turkey with Potatoes (Print Version)

# Ingredients:

→ For the Ground Turkey

01 - 1 pound lean ground turkey (93/7)
02 - 1 teaspoon salt
03 - 1/2 teaspoon black pepper
04 - 1/2 teaspoon garlic powder
05 - 1/2 teaspoon chili powder
06 - 1/2 teaspoon dried oregano

→ For the Potatoes

07 - 2 tablespoons olive oil or avocado oil
08 - 4 cups potatoes, cut into small dice (about 1.5 pounds)

→ For the Sauce

09 - 1 cup (8 oz) canned tomato sauce
10 - 1/2 cup water
11 - 2 teaspoons minced garlic (about 2 cloves)
12 - 1 teaspoon dried oregano
13 - 1 teaspoon dried basil
14 - 1/2 teaspoon dried parsley
15 - 1/2 teaspoon salt
16 - 1/2 teaspoon black pepper
17 - 1/2 teaspoon onion powder

# Instructions:

01 - Heat a large skillet over medium-high heat. Add the ground turkey and break it up with a wooden spoon. Cook for about 5-6 minutes until it starts to brown. Sprinkle in the salt, pepper, garlic powder, chili powder, and oregano. Stir well to combine the seasonings throughout the meat. Once the turkey is fully cooked with no pink remaining, transfer it to a plate and set aside.
02 - In the same skillet (no need to clean it), add the olive oil and let it heat up until it shimmers. Toss in your diced potatoes and spread them in an even layer. Let them cook undisturbed for a couple minutes to develop some color on the bottom, then stir occasionally. Continue cooking for 5-10 minutes until the potatoes are golden brown on the outside but not quite tender all the way through.
03 - Reduce the heat to medium. Return the cooked turkey to the skillet with the potatoes. Pour in the tomato sauce and water. Add the minced garlic, dried oregano, basil, parsley, salt, pepper, and onion powder. Stir everything together until well combined, making sure to scrape up any flavorful bits from the bottom of the pan.
04 - Cover the skillet with a lid and let everything simmer together for about 5 minutes, or until the potatoes are fork-tender and the sauce has thickened slightly. Check halfway through and give it a gentle stir to prevent sticking.
05 - Give the dish a final taste and adjust any seasonings if needed. Serve hot over roasted vegetables, rice, or cauliflower rice for a complete meal. A sprinkle of fresh herbs on top makes for a nice finishing touch if you have them on hand.
