# Ingredients:

→ Batter

01 - 3 ripe bananas, mashed
02 - 170 grams all-purpose flour
03 - 0.5 teaspoon baking soda
04 - 0.25 teaspoon granulated sugar, plus additional for dusting
05 - 2 teaspoons vanilla extract
06 - 0.5 teaspoon ground nutmeg
07 - 354 millilitres evaporated milk or water
08 - 1 large egg
09 - 0.5 teaspoon almond extract
10 - 0.25 teaspoon kosher salt
11 - 0.5 teaspoon ground cinnamon (optional)

12 - 480 millilitres vegetable oil

→ For Garnish

13 - Granulated sugar, for dusting

# Instructions:

01 - Mash the bananas thoroughly with a fork or in a food processor until smooth.
02 - In a mixing bowl, combine the mashed bananas, granulated sugar, evaporated milk or water, egg, kosher salt, baking soda, ground nutmeg, ground cinnamon (if using), vanilla extract, and almond extract. Mix until well blended.
03 - Gently fold the all-purpose flour into the wet mixture until just combined. Avoid overmixing.
04 - Pour vegetable oil into a large frying pan and heat over medium until the temperature reaches 177°C. Adjust the heat as necessary to maintain a range between 163°C and 177°C.
05 - Using an ice cream scoop, drop portions of the batter into the hot oil in batches, avoiding overcrowding. Fry for approximately 2 minutes per side, turning once, until golden brown.
06 - Transfer fried beignets to a plate lined with paper towels to drain excess oil.
07 - Allow beignets to cool slightly, then dust generously with additional granulated sugar and serve.

01 - For a lighter texture, do not overmix the batter after adding flour.
02 - Adjust frying oil temperature as needed to avoid burning the exterior while ensuring the interior cooks through.
