Ham and Cheese Scones (Print Version)

# Ingredients:

01 - 2 1/2 cups all-purpose flour
02 - 1/2 teaspoon salt
03 - 1/4 teaspoon ground black pepper
04 - 1 tablespoon baking powder
05 - 1/2 teaspoon baking soda
06 - 1/3 cup light brown sugar, packed
07 - 1 stick (113g) unsalted butter, very cold and cut into tiny pieces
08 - 1 large egg, at room temperature, beaten
09 - 1/2 cup plain full-fat yogurt
10 - 2 tablespoons whole milk
11 - 115g cheddar cheese, shredded
12 - 115g ham, diced
13 - 1/3 cup scallions, chopped

# Instructions:

01 - Preheat oven to 200°C. Line a large baking sheet with parchment paper and set aside.
02 - In a large bowl, combine flour, salt, pepper, baking powder, baking soda, and brown sugar. Mix thoroughly.
03 - Cut the cold butter into small cubes then quickly work it into the dry mixture using your fingers until it resembles a coarse meal.
04 - In a small bowl, whisk together the egg, yogurt, and milk until well combined.
05 - Add the liquid mixture to the dry ingredients and use a fork to stir everything together until just moistened.
06 - Gently fold in the cheese, ham, and scallions with a spatula until evenly distributed.
07 - Turn the shaggy dough out onto a clean, floured work surface and shape into an 8-inch circle. Cut the dough into 8 wedges and carefully transfer to the prepared baking sheet.
08 - Bake for 18-20 minutes, or until the tops are lightly golden brown.
09 - Allow scones to cool for 5 minutes on the tray, then serve warm.
