High Protein Chicken Enchiladas (Print Version)

# Ingredients:

01 - 1/2 cup refried beans (120g).
02 - 3/4 cup Greek yogurt (170g).
03 - 1 tablespoon taco seasoning.
04 - 3 cups shredded chicken (280g).
05 - 1.5 cups shredded Mexican cheese (168g), divided.
06 - 10 oz. can red enchilada sauce.
07 - 8 flour tortillas (8-inch, high fiber).

# Instructions:

01 - Preheat oven to 375°F. Spray 9x13-inch baking dish with nonstick spray.
02 - Mix yogurt, refried beans and taco seasoning. Stir in chicken and 1/2 cup cheese.
03 - Add 1/3 cup (80g) filling to each tortilla and roll up.
04 - Place rolled tortillas in baking dish. Top with enchilada sauce and remaining cheese.
05 - Bake 15-20 minutes until cheese is melted and bubbly.

# Notes:

01 - Can use any type of cooked chicken.
02 - High fiber tortillas recommended for better nutrition.
