In a heavy-bottomed saucepan, heat the sugar on medium-low heat until completely melted, swirling the pan gently every 20 seconds. The sugar will start to form clumps before melting slowly. Be patient and monitor closely to prevent burning.

Once the sugar is fully melted, immediately remove from heat and stir in the butter. The mixture will bubble vigorously.

Pour in the heavy cream and 1/2 teaspoon sea salt. Stir until everything is thoroughly combined. Once slightly cooled, taste and add remaining salt if desired.

Transfer to a small bowl or container and allow to cool completely before using.
