Easy Homemade Vegetable Soup (Print Version)

# Ingredients:

01 - 3 medium carrots, peeled and diced small
02 - 2 celery stalks, chopped
03 - 1 yellow onion, diced (about 1 cup)
04 - 3 cloves garlic, minced
05 - 3 Yukon gold potatoes, peeled and cut into bite-sized pieces
06 - 1 cup fresh or frozen green beans, chopped

→ Frozen Vegetables

07 - 1 cup sweet corn, frozen
08 - 1 cup green peas, frozen

→ Pantry Items

09 - 2 tablespoons extra virgin olive oil
10 - 32 ounces vegetable broth
11 - 2 cans (15 oz each) diced tomatoes with their juice
12 - 1 teaspoon Italian seasoning blend
13 - 1 teaspoon sea salt
14 - ½ teaspoon freshly ground black pepper

# Instructions:

01 - Heat up your olive oil in a large pot over medium-high heat. Toss in your chopped carrots, celery, and onion. Let them cook together for about 5 minutes, giving them a stir now and then until they start to soften and become fragrant.
02 - Add the minced garlic to the pot and let it cook for just 30 seconds until you can smell its wonderful aroma.
03 - Pour in the vegetable broth and tomatoes with their juice. Add the chopped potatoes, green beans, and all your seasonings - the Italian herbs, salt, and pepper. Give everything a good stir, bring it up to a boil, then lower the heat and let it simmer gently for 8-10 minutes, or until you can easily pierce the potatoes and carrots with a fork.
04 - Once your vegetables are tender, stir in the frozen corn and peas. Let the soup cook for just 2 more minutes until these last vegetables are heated through. Your soup is now ready to ladle into bowls and enjoy!
