Honey BBQ Chicken Mac Cheese (Print Version)

# Ingredients:

→ Cheese Sauce

01 - 150g fat-free cottage cheese
02 - 200g light cream cheese
03 - 150g 30% reduced fat cheddar cheese
04 - 150ml semi-skimmed milk (2%)
05 - 1 teaspoon garlic powder
06 - 1 teaspoon parsley
07 - ½ teaspoon black pepper
08 - 1 teaspoon paprika
09 - 1 teaspoon salt
10 - 1 teaspoon mustard

→ BBQ Chicken

11 - 400g chicken breasts, diced
12 - 2 tablespoons honey
13 - 1 teaspoon garlic powder
14 - 1 teaspoon onion powder
15 - 70g reduced BBQ sauce
16 - 1 teaspoon paprika
17 - 1 teaspoon salt
18 - ½ teaspoon black pepper
19 - 1 teaspoon ground ginger
20 - Low calorie cooking spray

→ Pasta

21 - 300g pasta
22 - 1 teaspoon salt

# Instructions:

01 - Season diced chicken with spices. Cook in air fryer at 180°C for 10-12 minutes or pan fry for 6-8 minutes until golden. Toss with honey and BBQ sauce, cook 1-2 minutes more to caramelize.
02 - Boil pasta in salted water according to package instructions. Reserve ¼ cup pasta water before draining.
03 - Blend cottage cheese, cream cheese, cheddar, milk, and seasonings until smooth. Heat in saucepan over medium-low heat, stirring until thickened.
04 - Mix pasta with cheese sauce, adding reserved pasta water if needed. Let sit 10 minutes for flavors to meld.
05 - Divide mac and cheese into bowls, top with honey BBQ chicken, and garnish with parsley.
