In a large mixing bowl, beat the softened butter and honey together until smooth and cohesive.

Add light brown sugar and granulated sugar to the bowl. Beat until mixture is light and fluffy.

Add eggs one at a time, mixing thoroughly after each addition. Stir in vanilla extract.

In a separate bowl, whisk together all-purpose flour and baking soda. Gradually add dry ingredients to wet mixture. Mix just until incorporated.

Portion dough using a cookie scoop or spoon, placing on prepared baking tray with at least 5 cm spacing between portions.

Bake in preheated oven for 8 to 12 minutes, or until edges become lightly golden. For a crisper texture, extend baking by 2 to 3 minutes.

Remove baking tray from oven. Allow cookies to cool on the tray for at least 2 minutes before transferring to a wire rack to cool completely.
