Honey Chipotle Chicken Rice Bowl (Print Version)

# Ingredients:

→ Protein

01 - 2 chicken breasts, diced

→ Sauce

02 - 1/4 cup honey
03 - 2 tablespoons chipotle peppers in adobo sauce, minced
04 - 2 tablespoons olive oil

→ Bowl Base

05 - 3 cups cooked rice (white, brown, or jasmine)
06 - 1 red bell pepper, diced
07 - 1 cup corn kernels (fresh, frozen, or canned)
08 - 1 cup black beans, rinsed and drained

→ Toppings

09 - 1 avocado, diced
10 - 1/4 cup fresh cilantro, chopped
11 - Juice of 1 lime
12 - Salt and pepper to taste

# Instructions:

01 - Heat 1 tablespoon olive oil in a skillet over medium heat. Add diced chicken, season with salt and pepper, and cook until browned and fully cooked, about 6-8 minutes. Remove and set aside.
02 - In the same skillet, add the remaining olive oil, honey, and chipotle peppers. Stir well and let it simmer for 2-3 minutes until slightly thickened.
03 - Return the cooked chicken to the skillet and toss in the honey chipotle sauce until fully coated. Cook for an additional 2 minutes to allow the flavors to meld.
04 - Assemble the rice bowls by dividing the cooked rice among four bowls. Top with chicken, bell peppers, corn, black beans, avocado, and fresh cilantro. Squeeze lime juice over each bowl and serve immediately.
