# Ingredients:

01 - 2 pounds boneless skinless chicken thighs

→ Honey Garlic Sauce

02 - Low-sodium soy sauce - 1/3 cup
03 - Pure honey - 1/3 cup
04 - Ketchup - 1/3 cup
05 - Fresh garlic - 6 cloves, minced
06 - Apple cider vinegar - 1/2 teaspoon
07 - Fresh ginger - 1 teaspoon, grated
08 - Crushed red pepper flakes - a pinch (optional for heat)
09 - Cornstarch - 2 tablespoons (for thickening)

10 - Fresh scallions, chopped
11 - Toasted sesame seeds
12 - Steamed rice (optional)

# Instructions:

01 - Place your chicken thighs in a single, even layer at the bottom of your slow cooker.
02 - In a mixing bowl, combine soy sauce, honey, ketchup, minced garlic, apple cider vinegar, grated ginger, and red pepper flakes if using. Whisk everything together until well blended. Hold off on the cornstarch for now - we'll use that later!
03 - Pour your honey garlic sauce over the chicken thighs. Cover and cook on high for about 3.5 hours (or if you prefer, low for 6-8 hours).
04 - Mix cornstarch with 2 tablespoons of cold water in a small bowl until smooth. Stir this mixture into your slow cooker and let it cook on high for another 15 minutes until the sauce gets nice and thick.
05 - You can either leave the chicken thighs whole or shred them right in the slow cooker using two forks. Serve over hot rice if you like, and top with fresh chopped scallions and a sprinkle of sesame seeds.
