Combine honey, water, and thyme sprigs in a small saucepan. Warm over medium-low heat, stirring until the honey is fully dissolved. Remove from heat and allow to infuse for 5 minutes. Strain the mixture to remove thyme, then blend in freshly squeezed lemon juice. Let the syrup cool completely.

In a pitcher, combine the cooled thyme-lemon syrup with sparkling water or club soda. Stir gently to incorporate, preserving carbonation.
