In a saucepan, bring 1 litre of water to a boil over medium-high heat.

Remove the pan from heat, add green tea bags and 3 mint sprigs, then cover. Allow to steep for 15–20 minutes for a delicate flavor or up to 45 minutes for extra strength.

Once steeped, remove tea bags and mint. Stir in 60 ml honey, adjusting up to 120 ml for desired sweetness. Mix until honey dissolves.

In a large pitcher, combine 250–500 ml ice cubes, 500 ml cold water, and the infused tea mixture. Stir well to combine and chill thoroughly.

Pour over additional ice in glasses and garnish with fresh mint leaves.
