Hungarian Goulash Beef Stew (Print Version)

# Ingredients:

01 - 1 kg beef chuck, cut into 3.5 cm cubes
02 - 1 3/4 teaspoons kosher salt
03 - 1 teaspoon black pepper
04 - 1 tablespoon extra virgin olive oil
05 - 30 grams unsalted butter
06 - 2 brown onions, diced into 1 cm pieces
07 - 5 garlic cloves, finely minced
08 - 1 red bell pepper, cut into 2 cm squares
09 - 1 yellow bell pepper, cut into 2 cm squares
10 - 2 tomatoes, each cut into 8 wedges then halved
11 - 60 ml Hungarian-style paprika
12 - 1 teaspoon caraway seeds (optional)
13 - 1 bay leaf
14 - 1 litre low-sodium beef stock
15 - 2 carrots, peeled, quartered lengthwise and sliced into 1 cm pieces
16 - 2 potatoes, cut into 1.2 cm cubes

17 - 1 tablespoon finely chopped parsley (optional)

# Instructions:

01 - Preheat oven to 180°C (160°C with fan). Alternatively, use a slow cooker or stovetop.
02 - Toss beef with half of the kosher salt and black pepper until evenly coated.
03 - In a large oven-safe Dutch oven, heat olive oil and melt butter over high heat. Add onions and sauté for 6 minutes until edges are lightly golden.
04 - Add beef to the onions and cook, stirring, until exterior is browned but not deeply seared, about 2 minutes.
05 - Add minced garlic, diced bell peppers, and tomatoes. Cook while stirring for 3 minutes until tomatoes begin to break down.
06 - Stir in Hungarian-style paprika, caraway seeds, and bay leaf, cooking for 30 seconds to release aroma.
07 - Pour in beef stock, mix gently, and bring to a simmer. Cover with lid and transfer to the oven for 90 minutes.
08 - Stir in carrots and potatoes. Return covered pot to the oven for an additional 30 minutes, or until beef is fork-tender.
09 - Ladle into bowls, garnish with chopped parsley, and serve hot. Optional: accompany with crusty bread.

# Notes:

01 - For richer flavour, use Hungarian sweet paprika and high-quality beef chuck.
02 - The caraway seeds are optional but traditional; they add an earthy undertone.
03 - Stew can also be prepared on the stovetop or in a slow cooker with adjustment to cooking times.
