Indian Spiced Rice Bowls (Print Version)

# Ingredients:

→ For the Spiced Meat

01 - 1 pound ground lamb or chicken, your choice
02 - 2-3 tablespoons vegetable oil (or coconut oil for more authentic flavor)
03 - 1 onion, diced
04 - 1/2 cup carrots, shredded
05 - 1/2 cup fresh cilantro, chopped
06 - 1/2 cup mango chutney
07 - 1/4 cup soy sauce
08 - 1 tablespoon garlic paste or minced fresh garlic
09 - 1 tablespoon ginger paste or minced fresh ginger
10 - 1 1/2 tablespoons garam masala, divided

→ For the Spicy Sauce

11 - 3/4 cup mayonnaise
12 - Your favorite hot sauce, to taste

→ For Serving

13 - 4 cups basmati or jasmine rice, cooked

# Instructions:

01 - Get all your ingredients together on a tray (except for 1/2 tablespoon garam masala, mayo, hot sauce, and rice - we'll use those later). Fire up your Blackstone griddle to medium heat and let it warm up for a few minutes.
02 - Pour your oil onto the hot griddle. Add your ground lamb or chicken, diced onions, and shredded carrots. Use your hibachi spatulas to break up the meat and stir everything around for about 4-5 minutes.
03 - Now toss in your cilantro, mango chutney, soy sauce, garlic, ginger, and 1 tablespoon of garam masala. Keep cooking and stirring for another 4-5 minutes until everything's well mixed and cooked through. Scoop it all back onto your tray.
04 - While your meat mixture cools a bit, mix up your sauce. In a bowl, stir together the mayo, a few good dashes of hot sauce, and that last 1/2 tablespoon of garam masala until it's all nicely blended.
05 - Start with a nice bed of hot rice in each bowl. Top with a generous scoop of your spiced meat mixture, then drizzle that spicy sauce all over the top.
