Wash and dry the lemons thoroughly. Zest the lemons and reserve the zest. Halve and juice the lemons, removing and discarding any seeds.

In a medium saucepan, combine lemon juice, lemon zest, granulated sugar, and water. Stir over low heat until the sugar fully dissolves.

Raise the heat to medium and bring the mixture to a boil. Reduce heat and simmer gently for 30–40 minutes, stirring occasionally, until the spread thickens to a glossy consistency.

Drop a small spoonful of the spread onto a cold plate. Allow it to cool briefly; if it gels and holds its shape, it is ready. If not, continue simmering for a few more minutes and repeat the test.

Remove from heat and let cool slightly. Pour the mixture into sterilized jars, seal tightly, and allow to cool completely before storing.
