Italian Lemon Spread Delight (Print Version)

# Ingredients:

→ Primary

01 - 4 large lemons
02 - 400 grams granulated sugar
03 - 240 millilitres water
04 - 0.5 teaspoon vanilla extract (optional)

# Instructions:

01 - Wash and dry the lemons thoroughly. Zest the lemons and reserve the zest. Halve and juice the lemons, removing and discarding any seeds.
02 - In a medium saucepan, combine lemon juice, lemon zest, granulated sugar, and water. Stir over low heat until the sugar fully dissolves.
03 - Raise the heat to medium and bring the mixture to a boil. Reduce heat and simmer gently for 30–40 minutes, stirring occasionally, until the spread thickens to a glossy consistency.
04 - Drop a small spoonful of the spread onto a cold plate. Allow it to cool briefly; if it gels and holds its shape, it is ready. If not, continue simmering for a few more minutes and repeat the test.
05 - Remove from heat and let cool slightly. Pour the mixture into sterilized jars, seal tightly, and allow to cool completely before storing.
