Jamaican Banana Fritters (Print Version)

# Ingredients:

01 - 4 very ripe bananas
02 - 60 g (½ cup) plain flour
03 - 3 tbsp sugar
04 - ½ tsp vanilla extract
05 - ¼ tsp nutmeg
06 - ¼ tsp ground cinnamon
07 - Pinch of salt
08 - Cooking oil for frying

# Instructions:

01 - Peel the bananas and break them into pieces in a mixing bowl. Mash thoroughly using a fork or potato masher until smooth.
02 - Add flour, sugar, vanilla extract, nutmeg, cinnamon, and salt to the mashed bananas. Mix until you achieve a soft paste with a consistency similar to pancake batter but slightly thicker.
03 - Pour cooking oil into a frying pan to a depth of about 1 cm and heat over medium heat. The oil should be hot but not smoking.
04 - Using a tablespoon, scoop portions of the batter and carefully drop into the hot oil. Fry until golden brown on one side, then flip and cook until the other side is equally golden and the center is fully cooked, about 2-3 minutes per side.
05 - Remove fritters with a slotted spoon and place on paper towels to drain excess oil. Serve warm as a snack or dessert.

# Notes:

01 - For best results, use overripe bananas with dark spots for maximum sweetness and flavor.
02 - Test oil temperature by dropping a small amount of batter - it should sizzle immediately but not burn.
