Peel the bananas and break them into pieces in a mixing bowl. Mash thoroughly using a fork or potato masher until smooth.

Add flour, sugar, vanilla extract, nutmeg, cinnamon, and salt to the mashed bananas. Mix until you achieve a soft paste with a consistency similar to pancake batter but slightly thicker.

Pour cooking oil into a frying pan to a depth of about 1 cm and heat over medium heat. The oil should be hot but not smoking.

Using a tablespoon, scoop portions of the batter and carefully drop into the hot oil. Fry until golden brown on one side, then flip and cook until the other side is equally golden and the center is fully cooked, about 2-3 minutes per side.

Remove fritters with a slotted spoon and place on paper towels to drain excess oil. Serve warm as a snack or dessert.
