Preheat your oven to 300°F (150°C).

Place egg whites in a stand mixer or use an electric hand mixer along with vinegar. Whip on high speed until stiff peaks form, about 10-15 minutes. Set aside.

In a separate bowl, combine egg yolks, cottage cheese, baking powder, salt, whey protein powder, egg white protein powder, and Allulose (if using). Whisk until well combined or blend until smooth.

Gently fold the egg yolk mixture into the whipped egg whites, incorporating it gradually to keep the mixture airy.

Pour into a parchment-lined and greased 5"x9" loaf pan. Bake for 50 minutes, or until a toothpick inserted in the center comes out clean and top is golden brown.

Turn off oven and leave bread inside for 10 additional minutes without opening the door. Then remove and let cool slightly before serving.
