Keto Cottage Cheese Cloud Bread (Print Version)

# Ingredients:

→ Egg Base

01 - 6 eggs, separated (room temperature)
02 - ½ teaspoon white vinegar

→ Dry Ingredients

03 - ¾ cup whey protein powder
04 - ¼ cup egg white protein powder
05 - ½ teaspoon baking powder
06 - ¼ teaspoon salt

→ Additional Ingredients

07 - 4 ounces cottage cheese
08 - 1 tablespoon Allulose (optional)
09 - 1 teaspoon vanilla extract (optional for French Toast)

→ Optional Toppings

10 - Bagel seasoning

# Instructions:

01 - Preheat your oven to 300°F (150°C).
02 - Place egg whites in a stand mixer or use an electric hand mixer along with vinegar. Whip on high speed until stiff peaks form, about 10-15 minutes. Set aside.
03 - In a separate bowl, combine egg yolks, cottage cheese, baking powder, salt, whey protein powder, egg white protein powder, and Allulose (if using). Whisk until well combined or blend until smooth.
04 - Gently fold the egg yolk mixture into the whipped egg whites, incorporating it gradually to keep the mixture airy.
05 - Pour into a parchment-lined and greased 5"x9" loaf pan. Bake for 50 minutes, or until a toothpick inserted in the center comes out clean and top is golden brown.
06 - Turn off oven and leave bread inside for 10 additional minutes without opening the door. Then remove and let cool slightly before serving.
