Roasted Keto Pumpkin Meatballs (Print Version)

# Ingredients:

01 - 500 grams minced meat.
02 - 1/2 cup onion.
03 - 2 garlic cloves.
04 - 1/4 medium pumpkin (shredded).
05 - 1/4 medium pumpkin (cut to squares).
06 - 1/4 cup parsley.
07 - Olive oil.
08 - Salt.
09 - Rosemary.

# Instructions:

01 - Heat oven to 180C/350F. Cut 1/4 pumpkin into squares and shred another 1/4 with grater.
02 - Mix meat with all ingredients including shredded pumpkin. Form into equal-sized balls.
03 - Place meatballs in parchment-lined baking dish. Add pumpkin squares between meatballs.
04 - Spray with olive oil and top with fresh rosemary sprigs.
05 - Bake for 40 minutes until cooked through.
