# Instructions:

01 - Cut chicken breast into small, roughly 1-inch pieces. Mix with soy sauce/tamari, honey, and chili paste. Marinate for 30 minutes to 2 hours for best flavor.
02 - Bring a pot of salted water to a boil. Cook noodles according to package instructions. Drain and set aside.
03 - Whisk together sauce ingredients, excluding water and cornstarch. In a separate small bowl, mix cornstarch with water to create a slurry.
04 - Heat sesame oil in a skillet over medium-low heat. Sauté green onions for 2-3 minutes, then add garlic and cook for an additional minute.
05 - Add marinated chicken to the skillet. Cook for 2-3 minutes on each side until the internal temperature reaches 165°F.
06 - Heat sauce in a pot, whisking in the cornstarch slurry. Let it thicken slightly. Add noodles and mix thoroughly.
07 - Mix in the cooked chicken and let flavors blend for 1-2 minutes. Garnish with crushed peanuts and green onions before serving.

# Notes:

01 - Best noodle options include brown rice udon, rice noodles, or even regular spaghetti.
02 - Always use low sodium soy sauce/tamari. If using regular, reduce the amount by half.
03 - Optional: Serve with additional vegetables like broccoli or bell peppers.
04 - Adjust brown sugar to 1-2 tablespoons based on your preferred sweetness level.
