La Scala Chopped Salad (Print Version)

# Ingredients:

→ Salad

01 - 1 head iceberg lettuce, rinsed and finely chopped
02 - 1/4 lb Italian salami, julienned
03 - 1 cup shredded mozzarella cheese
04 - 1 (15 1/2 ounce) can garbanzo beans, rinsed and well-drained

→ Dressing

05 - 1/3 cup extra-virgin olive oil
06 - 1/4 cup red wine vinegar
07 - 2 tsp Dijon mustard
08 - 1/2 tsp salt and pepper
09 - 1/4 cup grated Pecorino Romano or Parmesan cheese, plus more for serving

# Instructions:

01 - In a large serving bowl, combine olive oil, red wine vinegar, Dijon mustard, salt and pepper; whisk until well blended.
02 - Add the chopped iceberg lettuce, julienned salami, shredded mozzarella, and drained garbanzo beans to the bowl with the vinaigrette.
03 - Toss all ingredients with the vinaigrette until evenly coated. Finish with additional Pecorino Romano cheese and adjust salt and black pepper to taste if desired.
