Lemon Butter Salmon Dinner (Print Version)

# Ingredients:

01 - 4 salmon fillets (about 6 oz each).
02 - 2 tablespoons olive oil (for salmon).
03 - 2 tablespoons butter, melted.
04 - 2 tablespoons fresh lemon juice.
05 - 1 teaspoon lemon zest.
06 - 2 cloves garlic, minced.
07 - Fresh parsley, chopped.
08 - 4 medium-sized potatoes, cubed.
09 - 2 tablespoons olive oil (for potatoes).
10 - 1 teaspoon dried rosemary.
11 - 1/2 teaspoon garlic powder.
12 - 1 large head of broccoli, cut into florets.
13 - 1 tablespoon olive oil (for broccoli).
14 - 1/4 teaspoon red pepper flakes (optional).
15 - Salt and pepper to taste.

# Instructions:

01 - Heat oven to 400°F (200°C). Line baking sheet with parchment or foil.
02 - Toss potato cubes with oil, rosemary, garlic powder, salt, and pepper on baking sheet. Roast 20 minutes, flipping halfway.
03 - Mix broccoli with oil, salt, pepper, and red pepper flakes. Add to sheet with potatoes, cook 15-20 minutes more.
04 - Mix melted butter, oil, lemon juice, zest, garlic, salt, and pepper for salmon.
05 - Heat skillet on medium-high. Cook salmon 3-4 minutes per side. Finish with lemon butter sauce.
06 - Plate salmon with potatoes and broccoli. Top with parsley and extra lemon if desired.

01 - Salmon should flake easily when done.
02 - Pat salmon dry before cooking for crispy exterior.
03 - Can substitute other vegetables for broccoli.
