Lemon White Chocolate Posset (Print Version)

# Ingredients:

01 - Zest of 1 lemon, plus extra for garnish
02 - 60 ml fresh lemon juice
03 - 240 ml heavy cream
04 - 56 g white chocolate, chopped (or 60 ml white chocolate chips)
05 - 2.5 ml vanilla extract
06 - 50 g granulated sugar

# Instructions:

01 - In a medium saucepan over medium heat, combine the heavy cream, white chocolate, vanilla extract and sugar. Stir frequently and bring to a gentle boil. Continue boiling for 5 minutes, stirring constantly.
02 - Remove from heat and whisk in the lemon juice and zest until thoroughly combined.
03 - Allow the mixture to rest for 10 minutes before pouring into serving vessels. Transfer to the refrigerator and let set, uncovered, for at least 3 hours.
04 - Garnish with fresh lemon zest and white chocolate shavings before serving. Store covered in the refrigerator for up to 5 days, though best enjoyed within 3 days.

01 - For an elegant presentation, hollowed lemon shells can be used as serving vessels.
