# Ingredients:

→ Cake Base

01 - 2 large eggs, at room temperature
02 - 180 grams milk, at room temperature
03 - 75 grams flavorless vegetable oil (such as canola, corn, or sunflower)
04 - 60 grams freshly squeezed lime juice
05 - 1 tablespoon lime zest
06 - 24 grams lime flavored gelatin powder
07 - 180 grams all-purpose flour
08 - 150 grams granulated sugar
09 - 8 grams baking powder
10 - 1 gram salt

→ Lime Frosting

11 - 397 grams sweetened condensed milk
12 - 80 grams freshly squeezed lime juice
13 - 12 grams lime flavored gelatin powder
14 - 30 grams hot water

# Instructions:

01 - Line a 20 cm square baking pan with parchment paper and set aside. Preheat the oven to 180°C.
02 - In a large mixing bowl, whisk the eggs for 1 minute until slightly thickened. Add the milk, vegetable oil, lime juice, lime zest, and lime gelatin powder. Whisk thoroughly to blend.
03 - Sift the flour, granulated sugar, baking powder, and salt over the wet mixture. Gently whisk until just smooth, ensuring not to overmix.
04 - Pour the batter into the prepared pan. Bake for approximately 30 minutes, or until a toothpick inserted in the center emerges clean.
05 - Allow the cake to cool completely at room temperature in the pan.
06 - In a medium bowl, blend sweetened condensed milk and lime juice until slightly thickened. Dissolve the lime gelatin in hot water, stirring until completely liquified, then pour into the condensed milk mixture and mix thoroughly.
07 - Spread the lime frosting evenly over the cooled cake. Refrigerate for a minimum of 2 hours before serving.
