Low-Carb Taco Casserole (Print Version)

# Ingredients:

01 - 1 pound ground beef.
02 - 1 (1-oz) package taco seasoning.
03 - 1/3 cup water.
04 - 1 (10-oz) can diced tomatoes and green chiles, undrained.
05 - 1 cup shredded cheddar cheese.
06 - 4 large eggs.
07 - 1/2 cup milk or heavy cream.
08 - 1/2 cup sour cream.

# Instructions:

01 - Preheat oven to 350°F. Spray 8x8 or 11x7-inch pan with cooking spray.
02 - Brown ground beef and drain. Add taco seasoning, water, tomatoes and chiles. Simmer 5 minutes.
03 - Spread meat in pan and top with cheese.
04 - Whisk together eggs, milk/cream, and sour cream. Pour over beef mixture.
05 - Bake uncovered for 30-35 minutes.

01 - Can be made ahead and refrigerated.
02 - Freezes well up to 4 months.
03 - Can add vegetables like onions and peppers.
