Macau-Style Baked Portuguese Chicken (Print Version)

# Ingredients:

→ Chicken

01 - 6 skinless, boneless chicken thighs

→ Cheese Topping

02 - 1 cup shredded mozzarella cheese or mozzarella cheddar blend

→ Fried Rice

03 - 6 cups cooked jasmine rice or long grain white rice
04 - 4 large eggs
05 - 3 tablespoons regular soy sauce
06 - 2 tablespoons vegetable oil or neutral oil

→ Chicken Marinade

07 - 1 teaspoon Shaoxing cooking wine or dry sherry wine or chicken broth
08 - 1/4 teaspoon salt
09 - 1/2 teaspoon garlic powder
10 - 1/2 teaspoon curry powder

→ Coconut Curry Sauce

11 - 2 cups Yukon gold or yellow russet potatoes, peeled and diced
12 - 3/4 cup diced onion
13 - 1 tablespoon vegetable oil or neutral oil
14 - 414 ml full-fat coconut milk
15 - 1 teaspoon curry powder
16 - 1 teaspoon ground turmeric
17 - 1 teaspoon salt

# Instructions:

01 - Slice chicken thighs in half. Combine with Shaoxing wine, salt, garlic powder, and curry powder in a bowl. Mix well and set aside to marinate.
02 - Peel and dice potatoes into 2.5 cm cubes. Boil in a large pot of water for 5 minutes or until fork tender. Drain and set aside.
03 - Heat 30 ml vegetable oil in a large pan on medium-high heat. Add cooked rice, breaking it apart. Season with soy sauce and pour whisked eggs over the rice. Toss until eggs are just cooked. Spread fried rice evenly in a 23x33 cm baking dish.
04 - Preheat oven to 260°C. In the same pan, heat 15 ml oil on medium-high. Sauté diced onions until softened. Add marinated chicken and brown on both sides for 5 minutes. Stir in cooked potatoes, coconut milk, curry powder, turmeric, and salt. Mix thoroughly.
05 - Spread chicken and sauce evenly over the rice in the baking dish. Sprinkle with shredded cheese. Broil for 5–10 minutes until cheese melts and lightly browns, monitoring closely.
06 - Remove dish from oven and serve hot.

01 - Monitor broiling closely as cheese can brown quickly due to the high oven temperature.
02 - If using chicken broth in the marinade, it can add additional moisture for extra tenderness.
