Mandarin Orange with Avocado Mix (Print Version)

# Ingredients:

→ Dressing

01 - ¼ cup freshly squeezed orange juice or mandarin juice
02 - ½-1 teaspoon orange zest
03 - ¼ cup olive oil
04 - 1 teaspoon Dijon mustard
05 - 2 teaspoons honey
06 - 2 tablespoons apple cider vinegar or red wine vinegar
07 - ½ teaspoon salt, more to taste
08 - ¼ teaspoon black pepper, more to taste
09 - 1 small clove of garlic, minced or grated
10 - ½ teaspoon dried thyme or fresh thyme

→ Salad

11 - 6 cups mixed greens
12 - ½ cup candied pecans or lightly toasted pecans
13 - 4-6 mandarin oranges, peeled and separated into sections (or 2 cans of mandarin oranges, drained)
14 - 2 small avocados, peeled, pitted, and diced
15 - ½ cup pomegranate seeds or dried cranberries
16 - ½ cup crumbled feta
17 - ¼ cup sliced shallots or red onion

# Instructions:

01 - Peel and divide the mandarin slices or segments. Slice and chop all the remaining ingredients as needed.
02 - Place dressing ingredients in a small bowl or jar and whisk or shake well. Adjust to taste by adding more oil for creaminess, honey for sweetness, or vinegar for tartness.
03 - Place salad greens in a large salad bowl. Top with shallots, pomegranate seeds, candied pecans, crumbled feta cheese, mandarin orange slices, and diced avocado. Drizzle with vinaigrette and toss gently.
