Mango Overnight Oats (Print Version)

# Ingredients:

→ For the Mango Milk

01 - 3/4 cup frozen or fresh mango
02 - 1 can (12 ounce) full-fat coconut milk
03 - 1/2 cup water
04 - 2 tablespoons fresh lime juice (1-2 limes)
05 - 2-3 tablespoons maple syrup
06 - 1 teaspoon vanilla extract (optional)
07 - 1/4 teaspoon kosher salt

→ For the Oatmeal

08 - 2 cups quick-cooking or rolled oats
09 - 2 tablespoons chia seeds or ground flaxseed
10 - 3/4 cup diced mango, thawed if frozen

→ For Topping (Optional)

11 - Nut butter
12 - Hemp hearts
13 - Almonds

# Instructions:

01 - Add the mango to a high-speed blender along with the coconut milk, water, lime juice, maple syrup, vanilla, and salt. Blend on high for 45 to 60 seconds, until completely smooth. The mixture may appear thick, which is expected.
02 - In a large bowl, mix the oats and chia seeds thoroughly. Pour the mango milk into the bowl, then add the chopped mango and stir until everything is well combined.
03 - Let the mixture sit for at least 5 minutes to allow the oats and chia seeds to absorb some of the liquid. Then, mix again to incorporate any excess liquid on top.
04 - Transfer the oatmeal to jars or other containers, then store in the refrigerator for at least 4 hours, preferably overnight.
05 - Top as desired and enjoy cold or warm. Leftovers will keep in the refrigerator for up to 5 days.

01 - The sweetness level can be adjusted according to your preference and the natural sweetness of your mangoes.
02 - Both quick-cooking and rolled oats work well, though the texture will vary slightly.
