Marinated Cucumbers Onions Tomatoes (Print Version)

# Ingredients:

→ Vegetables

01 - 2 cucumbers, thinly sliced
02 - 1 pint cherry or grape tomatoes, halved
03 - 1 small red or white onion, thinly sliced

→ Marinade

04 - 60 ml apple cider vinegar or red wine vinegar
05 - 30 ml extra virgin olive oil
06 - 1 clove garlic, minced
07 - 1 tablespoon chopped fresh parsley or dill
08 - Salt, to taste
09 - Black pepper, to taste
10 - 0.5 teaspoon red pepper flakes (optional)

# Instructions:

01 - Wash cucumbers and tomatoes thoroughly. Slice cucumbers thinly, halve the cherry or grape tomatoes, and thinly slice the onion.
02 - In a mixing bowl, whisk together the vinegar, extra virgin olive oil, minced garlic, a generous pinch of salt and black pepper. Add red pepper flakes if desired.
03 - Place the sliced cucumbers, halved tomatoes, and sliced onion in a large bowl.
04 - Pour the prepared marinade over the vegetables. Toss gently to ensure even coating.
05 - Cover the bowl and refrigerate for a minimum of 30 minutes to allow flavors to develop. For optimal taste, marinate for several hours or overnight.
06 - Toss the salad once more before serving. Sprinkle with freshly chopped parsley or dill as garnish.
