Marry Me Chicken Soup (Print Version)

# Ingredients:

01 - 1 tablespoon olive oil.
02 - ½ onion, diced.
03 - 4 cloves garlic, minced.
04 - ½ cup sun-dried tomatoes in olive oil, drained and chopped.
05 - 2 tablespoons tomato paste.
06 - 7 cups chicken broth.
07 - 2 teaspoons salt, plus more to taste.
08 - ½ teaspoon pepper.
09 - 2 teaspoons Italian seasoning.
10 - ½ teaspoon crushed red pepper.
11 - 12 oz gluten free shell pasta.
12 - 2 cups shredded cooked chicken.
13 - 3 cups fresh baby spinach, chopped.
14 - ¾ cup half & half.
15 - 1 package Boursin cheese.
16 - ½ cup parmesan cheese, divided.

# Instructions:

01 - Heat olive oil in Dutch oven over medium heat. Cook onion and garlic 3-4 minutes until soft.
02 - Add sun-dried tomatoes and tomato paste. Stir 1-2 minutes.
03 - Add broth, seasonings, and bring to boil. Add pasta and cook until al dente.
04 - Reduce heat to medium-low. Add chicken, spinach, half & half, Boursin, and 1/4 cup parmesan. Stir 2-3 minutes until creamy.
05 - Top with parsley, red pepper flakes, and remaining parmesan.

# Notes:

01 - Can be made dairy-free with substitutions.
02 - Best to cook pasta separately for meal prep.
03 - Freezes well without pasta and dairy.
