Mediterranean Chicken Meatballs (Print Version)

# Ingredients:

01 - 450 g ground chicken or ground turkey
02 - 30 g whole wheat panko breadcrumbs
03 - 1 large egg
04 - 50 g sun-dried tomatoes in oil, finely chopped
05 - 30 g feta cheese, crumbled
06 - 25 g parmesan cheese, grated
07 - 2 cloves garlic, minced, or 1/2 teaspoon garlic powder
08 - 25 g green onions, chopped
09 - 2 tablespoons fresh parsley, chopped
10 - 1/2 teaspoon salt
11 - 1/2 teaspoon black pepper
12 - Fresh lemon juice to taste, optional

# Instructions:

01 - Preheat oven to 200°C. Line a baking sheet with parchment paper or lightly coat with nonstick spray.
02 - In a large mixing bowl, thoroughly combine ground chicken, panko breadcrumbs, egg, chopped sun-dried tomatoes, feta cheese, parmesan, garlic, green onions, parsley, salt, and black pepper. Mix until the mixture is uniform, using a spoon or your hands.
03 - Form the mixture into balls approximately 2.5–3 cm in diameter, using a small or medium cookie scoop. Arrange evenly on the prepared baking sheet.
04 - Bake for 20 to 25 minutes, or until the meatballs are lightly browned and fully cooked through.
05 - Optionally, squeeze fresh lemon juice over the meatballs before serving.

# Notes:

01 - Serve alongside a Mediterranean salad, over brown rice, or with tzatziki sauce and fresh vegetables for a balanced meal.
02 - Using sun-dried tomatoes packed in oil enhances moisture and flavour.
