01 - 1 lb ground chicken
02 - 1 cup cherry tomatoes, halved
03 - ½ cup Kalamata olives, pitted and halved
04 - ¾ cup feta cheese, crumbled

05 - ¼ cup extra virgin olive oil
06 - 1 medium red onion, finely chopped
07 - 3 cloves garlic, minced

08 - 1 tsp dried oregano
09 - ½ tsp dried basil
10 - ¼ tsp red pepper flakes (optional)
11 - Salt and pepper to taste
12 - Fresh parsley for garnish (optional)

# Instructions:

01 - Heat the olive oil in a large skillet over medium heat. Add the chopped red onion and cook until translucent, about 3-4 minutes.
02 - Add the minced garlic to the skillet and sauté for an additional minute until fragrant.
03 - Incorporate the ground chicken into the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, approximately 5-7 minutes.
04 - Sprinkle the dried oregano, dried basil, red pepper flakes (if using), salt, and pepper. Stir well to combine the spices with the chicken.
05 - Add the cherry tomatoes and Kalamata olives to the skillet. Stir to distribute evenly and cook for another 5 minutes until the tomatoes soften slightly.
06 - Reduce the heat to low and sprinkle the crumbled feta cheese over the chicken mixture. Cover the skillet with a lid and let it sit for 2-3 minutes or until the feta starts to melt.
