Mexican Cucumber Salad with Corn (Print Version)

# Ingredients:

→ Dressing

01 - 2 tablespoons sour cream
02 - 2 tablespoons mayonnaise (can be light)
03 - 2 tablespoons cotija cheese, crumbled
04 - Zest and juice of 1 lime
05 - ½ teaspoon chili powder
06 - 1 clove garlic, minced

→ Salad

07 - 6 mini cucumbers, thinly sliced
08 - 1 cup frozen sweet corn, thawed
09 - ¼ cup fresh cilantro, minced
10 - 2 tablespoons red onion, minced
11 - Sea salt, to taste

# Instructions:

01 - In a medium-sized bowl, combine sour cream, mayonnaise, cotija cheese, lime zest and juice, chili powder, and minced garlic. Mix until well incorporated.
02 - Add the sliced cucumbers, thawed corn, minced cilantro, and minced red onion to the bowl with the dressing. Gently toss until all ingredients are evenly coated. Season with sea salt to taste.

# Notes:

01 - Cotija cheese can be substituted with feta cheese if not available.
