Navy Bean Ham Soup (Print Version)

# Ingredients:

01 - 1 pound dried navy beans.
02 - 1 ham bone + ham scraps.
03 - 1 tablespoon olive oil.
04 - 1 large onion, peeled and chopped.
05 - 6 cloves garlic, minced.
06 - 1 tablespoons fresh thyme leaves.
07 - 2 teaspoons ground cumin.
08 - 1/2-1 teaspoon crushed red pepper.
09 - 10 cups water.
10 - Salt and pepper to taste.

# Instructions:

01 - Place the dried beans in a large bowl and cover with three inches of water. Soak overnight (up to 24 hours) to soften. Drain when ready to use.
02 - Place a large 6 quart pot over medium heat. Add oil, ham bone, onions, and garlic. Sauté for 3-5 minutes until onions soften.
03 - Add drained beans, thyme, cumin, crushed red pepper, 10 cups water, and ham scraps. Don't salt yet as ham bones can be very salty.
04 - Bring to a boil. Lower heat and simmer for 60-90 minutes, covered, until beans are very soft. Stir occasionally.
05 - Remove ham from bone and stir into soup. Discard bone. Add 1-2 cups water if too thick. Season with salt and pepper to taste.

# Notes:

01 - You can add 2-3 chopped carrots and celery stalks with the onions for extra color and nutrition.
