Get your skillet warmed up over medium heat. While it's heating, butter one side of each slice of rye bread.

Put 4 bread slices on your skillet, buttered side down. Layer 2 slices of Swiss cheese on each piece of bread.

Pile about 1/4 pound of that thinly sliced pastrami on each sandwich. Top with a generous 1/4 cup of sauerkraut.

Spread some Russian dressing on the unbuttered sides of your remaining bread slices. Place them dressing-side down on top of your sandwiches.

Let them cook for 3-4 minutes until you've got a nice golden crust on the bottom. Carefully flip them over and cook another 2-3 minutes until the cheese gets all melty.

Take those beautiful sandwiches off the heat, slice them diagonally, and serve them right away with some crisp dill pickle slices on the side.
