Classic NY Pastrami Sandwich (Print Version)

# Ingredients:

→ Bread & Meat

01 - 1 pound pastrami, sliced extra thin
02 - 8 slices rye bread

→ Toppings & Cheese

03 - 8 slices Swiss cheese
04 - 1 cup sauerkraut, drained
05 - 1/4 cup Russian dressing
06 - Dill pickle slices, for serving

→ Spreads

07 - 2 tablespoons butter, softened

# Instructions:

01 - Get your skillet warmed up over medium heat. While it's heating, butter one side of each slice of rye bread.
02 - Put 4 bread slices on your skillet, buttered side down. Layer 2 slices of Swiss cheese on each piece of bread.
03 - Pile about 1/4 pound of that thinly sliced pastrami on each sandwich. Top with a generous 1/4 cup of sauerkraut.
04 - Spread some Russian dressing on the unbuttered sides of your remaining bread slices. Place them dressing-side down on top of your sandwiches.
05 - Let them cook for 3-4 minutes until you've got a nice golden crust on the bottom. Carefully flip them over and cook another 2-3 minutes until the cheese gets all melty.
06 - Take those beautiful sandwiches off the heat, slice them diagonally, and serve them right away with some crisp dill pickle slices on the side.

01 - For the real New York deli experience, make sure to get your pastrami sliced extra thin at the deli counter.
02 - Feel free to swap the sauerkraut for coleslaw if that's more your style, or add some spicy brown mustard for an extra kick.
