09 - 1 (12-oz) box short pasta shapes (spirals or bow ties work great)

11 - ½ cup grated Parmesan
12 - ¼ cup cream cheese (or ricotta, mascarpone)

# Instructions:

01 - Heat the oil in a large pot over medium heat. Sauté the onion, garlic and sun-dried tomatoes until they start to soften, which takes about 2 minutes. Then, stir in the tomato paste and Italian seasoning, letting them cook for another minute to release their flavors.
02 - Pour in the chicken stock, making sure to scrape up any tasty browned bits from the bottom of the pot. Add your diced tomatoes and pasta, then season with salt and pepper to your liking.
03 - Bring everything to a bubble, then lower to a gentle simmer and let it cook until the pasta is just right, about 10-15 minutes. Keep an eye on it - if the pasta starts looking thirsty, just splash in a little extra broth.
04 - Take your pot off the heat and stir in both the Parmesan and cream cheese until they melt into a silky sauce. Sprinkle with fresh parsley if you're feeling fancy. Let it rest for 3-4 minutes to thicken up before serving hot.
