Easy Pan Fried Tilapia (Print Version)

# Ingredients:

→ For the Fish

01 - 4 tilapia fillets (about 4 oz each), patted dry
02 - A good pinch each of salt and fresh ground black pepper
03 - 1 teaspoon paprika
04 - 1 teaspoon garlic powder

→ For Coating & Cooking

05 - ½ cup all-purpose flour for dredging
06 - 1 tablespoon olive oil
07 - 2 tablespoons butter

→ For Serving

08 - Fresh lemon wedges for squeezing
09 - Fresh parsley, chopped

# Instructions:

01 - Pat those tilapia fillets dry with paper towels - this helps them get nice and crispy later. Season both sides with a sprinkle of salt, pepper, paprika, and garlic powder.
02 - Spread your flour on a plate. Give each fillet a light coating of flour on both sides, then shake off the extra. You want just a thin layer here.
03 - Put your skillet over medium-high heat and add the olive oil and butter. Let it get nice and hot - when the butter's bubbling and just starting to brown, you're ready to go.
04 - Lay your fillets in the hot pan and let them sizzle for about 2-3 minutes until golden brown. Flip them gently and cook another 2-3 minutes on the other side. They should flake easily with a fork when done.
05 - Let the fish rest for a couple minutes, then serve it up with a good squeeze of fresh lemon juice and a sprinkle of chopped parsley.

# Notes:

01 - Let your pan get properly hot before adding the fish - this is key for getting that golden crust
02 - Don't overcrowd the pan - cook in batches if needed, adding more oil and butter between batches
03 - A non-stick pan works better than cast iron for this delicate fish
