# Ingredients:

→ For the Chicken

01 - 2 pounds boneless skinless chicken thighs, cut into bite-sized pieces
02 - 1 large egg
03 - 1½ teaspoons salt
04 - 1 pinch black pepper
05 - 2 tablespoons canola oil
06 - ¼ cup all-purpose flour
07 - ½ cup cornstarch

→ Orange Sauce

08 - ¼ cup orange juice
09 - Zest of 1 orange
10 - ¼ cup soy sauce
11 - 8 tablespoons white vinegar
12 - 4 tablespoons white sugar
13 - 4 tablespoons brown sugar
14 - 3 cloves garlic, minced
15 - 1 tablespoon fresh ginger root, minced
16 - ¼ teaspoon hot pepper flakes
17 - 1 teaspoon sesame oil
18 - 2 tablespoons rice wine
19 - 1 tablespoon cornstarch
20 - 2 tablespoons water

→ For Serving (Optional)

21 - Cooked white rice
22 - Extra orange zest
23 - Sesame seeds
24 - Chopped green onions

# Instructions:

01 - Mix together orange juice, orange zest, soy sauce, vinegar, both sugars, minced garlic, ginger, pepper flakes, sesame oil, rice wine, cornstarch, and water in a bowl. Set aside.
02 - In one bowl, whisk the egg with salt, pepper, and 1 tablespoon of oil. In another shallow dish, combine flour and cornstarch.
03 - Add enough oil to a large frying pan for deep frying. Heat over medium-high heat until it reaches 375°F.
04 - Dip chicken pieces first in the egg mixture, then coat thoroughly in the flour mixture.
05 - Working in batches to avoid overcrowding, fry chicken for 3-4 minutes per side until golden and crispy. Transfer to a cooling rack.
06 - Pour out all but 1 tablespoon of oil from the pan. Add the orange sauce and bring to a boil. Remove from heat, add the fried chicken, and toss until well coated.
07 - Serve hot over rice. If desired, garnish with extra orange zest, sesame seeds, and chopped green onions.
