Panera Broccoli Cheese Soup (Print Version)

# Ingredients:

01 - 2 tablespoons butter or margarine.
02 - 1 grated carrot.
03 - 1 stalk celery, chopped.
04 - 1 small bell pepper, chopped.
05 - 1 onion, chopped.
06 - 2 tablespoons wheat flour.
07 - 1-2 cloves garlic, minced.
08 - 2 cups hot chicken broth.
09 - 2 cups whole milk or half & half.
10 - 3-4 cups broccoli, chopped.
11 - 1-2 cups cheddar cheese.
12 - Salt and pepper to taste.

# Instructions:

01 - Heat butter in skillet. Add chopped vegetables and cook until soft, about 5 minutes.
02 - Add minced garlic, cook 1-2 minutes more.
03 - Stir in flour to coat vegetables completely.
04 - Pour in milk and chicken broth. Add broccoli, bring to boil, then cover and cook 15-20 minutes.
05 - Once broccoli is tender, add cheese. Reduce heat and stir until melted. Season with salt and pepper.

01 - Use freshly grated cheese for best melting.
