Get your oven nice and hot - set it to 425°F (220°C).

Give your cauliflower a good wash and dry, then cut it into bite-sized pieces that are about the same size.

In a big bowl, mix together your olive oil, garlic powder, salt, and pepper. Add cayenne or paprika if you want some kick.

Toss your cauliflower in the seasoned oil until every piece is nicely coated.

Sprinkle on your freshly grated Parmesan and toss again until every piece is coated in cheesy goodness.

Spread everything on a parchment-lined baking sheet - make sure the pieces aren't crowded. Bake for 25-30 minutes, giving them a flip halfway through, until they're golden and crispy.
