Summer Peach & Blueberry Kale (Print Version)

# Ingredients:

→ For the salad

01 - 1 bunch of kale, chopped
02 - 2-3 fresh peaches, pitted & chopped
03 - 1 cup blueberries
04 - ¼-⅓ cup toasted pepitas
05 - 1 tsp extra virgin olive oil
06 - ½ lemon, juiced

→ For the lemon vinaigrette

07 - 2 medium lemons, juiced
08 - 4 tsp honey
09 - 1-2 tsp extra light tasting olive oil
10 - Cracked black pepper, to taste

# Instructions:

01 - Whisk all vinaigrette ingredients together in a bowl. Store in the refrigerator until ready to serve.
02 - Place the kale in a bowl and drizzle with olive oil and lemon juice. Massage the kale with your hands to fully coat with oil and lemon juice for about 5 minutes.
03 - Add peaches and blueberries to the massaged kale. Pour vinaigrette over the top and toss to combine.
04 - Sprinkle with toasted pepitas immediately before serving.

# Notes:

01 - To toast pepitas: heat a dry skillet over medium heat, add pepitas and stir frequently until lightly golden and fragrant.
