Preheat your oven to 200°C. Roll out the puff pastry on a lightly floured surface and place it on a baking sheet. If using flatbread, place it directly on the sheet.

Drizzle olive oil evenly over the flatbread or puff pastry base for added flavor and to prevent sticking.

Arrange the pear slices slightly overlapping to cover the base entirely.

Scatter crumbled Gorgonzola cheese over the pears.

Bake in the preheated oven for 15–20 minutes, or until the base is golden and crisp, and the cheese has melted.

Remove the flatbread from the oven. Drizzle honey generously over it, then top with chopped walnuts, arugula leaves, and freshly cracked black pepper.
