Soft Cinnamon Roll Cookies (Print Version)

# Ingredients:

01 - 3/4 cup granulated sugar.
02 - 2 tablespoons butter-flavored shortening.
03 - 2 tablespoons butter, room temperature.
04 - 1 egg, room temperature.
05 - 1/4 cup buttermilk, room temperature.
06 - 1/4 teaspoon vanilla extract.
07 - 1 3/4 cups all-purpose flour.
08 - 1/2 teaspoon baking powder.
09 - 1/2 teaspoon baking soda.
10 - 1/8 teaspoon salt.
11 - 1/2 cup brown sugar.
12 - 1/2 tablespoon cinnamon.
13 - 2 tablespoons unsalted butter, melted.
14 - 2 oz cream cheese, room temperature.
15 - 2 tablespoons butter, room temperature.
16 - 1/2 cup + 2 tablespoons powdered sugar.
17 - 2-3 teaspoons milk.
18 - Splash vanilla extract.

# Instructions:

01 - Cream together sugar, butter and shortening. Mix in egg, buttermilk and vanilla. Combine with sifted dry ingredients to form soft dough. Refrigerate 1+ hours.
02 - Mix brown sugar and cinnamon. Set aside.
03 - Roll cold dough into 12x9 rectangle on floured surface. Brush with melted butter and sprinkle with cinnamon sugar. Roll into log and freeze 30 minutes.
04 - Slice 1-inch thick, press to tighten spirals. Bake at 350°F for 10-12 minutes, checking at 6 minutes for unraveling.
05 - Make cream cheese glaze and brush on warm cookies. Let set before storing between parchment paper.

01 - Dough must stay cold while working.
02 - Press cookies tight before baking.
03 - Glaze won't completely harden.
