Southwest Chicken Wrap (Print Version)

# Ingredients:

→ For the Chicken

01 - ¾ lb boneless, skinless chicken breasts, diced into bite-sized pieces
02 - ¼ cup lime juice (about one lime)
03 - ½ teaspoon chili powder
04 - ½ teaspoon onion powder
05 - 1 teaspoon garlic powder
06 - ½ teaspoon smoked paprika
07 - ¼ teaspoon salt
08 - 3 tablespoons olive oil
09 - 1 tablespoon chipotle pepper in adobo sauce

→ For the Wrap

10 - 4 large tortillas
11 - 1 cup uncooked rice
12 - 1 small red bell pepper, chopped
13 - 1 jalapeño, chopped
14 - ½ red onion, thinly sliced
15 - 3 garlic cloves, minced
16 - 1 teaspoon olive oil
17 - ¾ cup thawed or fresh corn kernels
18 - 1 cup black beans, drained and rinsed
19 - ¼ cup cotija cheese

→ For the Southwest Crema

20 - ⅓ cup sour cream
21 - 1½ tablespoons honey
22 - ½-1 tablespoon chipotle peppers in adobo
23 - 1 tablespoon lime juice
24 - 3 tablespoons fresh cilantro, chopped
25 - 1-2 tablespoons water
26 - ¼ teaspoon salt

# Instructions:

01 - Pat chicken dry and cut into bite-sized pieces. Mix with olive oil, lime juice, and all the seasonings in a bowl. Let it sit for at least 15 minutes to soak up the flavors.
02 - Get your rice cooking according to package directions. While it's bubbling away, blend up your crema - mix sour cream, honey, chipotle, lime juice, cilantro, water, and salt until smooth.
03 - Heat up your skillet and cook the marinated chicken for about 12-15 minutes until it's nicely browned and cooked through. Set aside once done.
04 - In the same pan, cook up your bell pepper, jalapeño, red onion, and garlic until they're soft and fragrant, about 5 minutes. Toss the chicken back in to warm everything up together.
05 - Lay out your tortillas and start building - first rice, then your chicken-veggie mix, beans, corn, and cotija cheese. Drizzle with that tasty crema you made.
06 - Fold in the sides of your tortilla and roll it up nice and tight. Cut in half if you like, and maybe serve with extra crema for dipping.

# Notes:

01 - Make these gluten-free by using corn tortillas instead of wheat ones.
02 - Adjust the heat level by changing how much chipotle and jalapeño you use.
03 - The chicken can marinate overnight for even better flavor.
