Spicy Black Bean Soup (Print Version)

# Ingredients:

01 - 1 tablespoon olive oil.
02 - 1 yellow onion, chopped.
03 - 1 bell pepper, chopped.
04 - 2 jalapeno peppers, chopped.
05 - 1 celery rib, chopped.
06 - 1 medium carrot, peeled and chopped.
07 - 4 garlic cloves, chopped.
08 - 1 tablespoon chili powder.
09 - 1 teaspoon cayenne.
10 - 1 teaspoon paprika.
11 - 1 teaspoon oregano.
12 - 1/2 teaspoon cumin.
13 - 1/2 teaspoon spicy red pepper flakes.
14 - Salt and pepper to taste.
15 - 2 cans (15 ounces each) black beans, drained and rinsed.
16 - 2 cups chicken broth or vegetable broth.
17 - Juice from 1 small lime.

# Instructions:

01 - Heat olive oil in large pot over medium heat. Cook peppers, onion, celery and carrot for 10 minutes until soft.
02 - Stir in garlic and all spices. Cook for 30 seconds until fragrant.
03 - Add beans and broth. Bring to quick boil, then simmer for 20 minutes or longer for deeper flavor.
04 - Optional: Blend half the soup until smooth, then return to pot. Or use immersion blender.
05 - Season with salt and pepper. Serve with fresh lime juice and your choice of garnishes.

# Notes:

01 - Makes 4 large servings.
02 - Heat level is medium - adjust peppers to taste.
03 - Can use vegetable broth for vegetarian version.
