# Ingredients:

01 - 1 hot pepper, finely minced (such as green banana pepper, jalapeño, or a mix of green and red peppers)
02 - ½ cup fresh cilantro, finely minced
03 - ½ cup scallions, finely minced
04 - ½ tomato, finely minced (optional)

→ Liquids and Seasonings

05 - ½ cup white vinegar
06 - ¼ cup water
07 - 1 tablespoon lime juice
08 - 2 tablespoons vegetable oil
09 - ½ teaspoon salt
10 - ½ teaspoon sugar

# Instructions:

01 - Finely mince the hot pepper, fresh cilantro, scallions, and tomato if using.
02 - Place minced vegetables and aromatics into a clean jar.
03 - Add white vinegar, water, lime juice, vegetable oil, salt, and sugar to the jar. Stir to thoroughly combine.
04 - Ensure the solid ingredients are fully submerged; add additional oil, water, and vinegar in a 1:2:4 ratio if needed.
05 - Let the mixture sit in a cool, dark place for a minimum of 24 hours to allow flavors to develop, then refrigerate.
