In a small bowl, stir together the soy sauce, sriracha, garlic powder, brown sugar, white pepper, sesame oil, and water until the sugar dissolves. This is your flavor bomb - taste and adjust if you want it sweeter, saltier, or spicier!

Bring a pot of water to a boil and cook your ramen noodles according to the package directions. I usually go about 30 seconds less than recommended for a nice chewy texture. Drain the noodles but don't rinse them - that starchy coating helps the sauce stick better!

While the noodles are cooking, heat your oil in a wok or large skillet over medium-high heat. Toss in the minced garlic, ginger, red chili flakes, and the white parts of your chopped scallions. Stir-fry for about a minute until everything smells amazing and the garlic is turning golden (but not brown - that gets bitter).

Add your drained noodles to the fragrant oil in the pan. Sprinkle half a packet of the ramen seasoning over everything, then pour in your sauce mixture. Toss in most of the green parts of the scallions, saving some for garnish. Keep everything moving in the pan with tongs or chopsticks until the noodles are evenly coated with that glossy, spicy sauce.

Divide the noodles between two bowls. Now for the fun part - top each bowl with a fried egg (or a raw egg yolk if you're feeling fancy), a sprinkle of sesame seeds, the reserved scallion greens, and some fried spam if you're using it. Dig in while it's hot and steamy!
