Mediterranean Spinach and Feta Crisps (Print Version)

# Ingredients:

01 - 2 cups fresh spinach, chopped
02 - 1 cup crumbled feta cheese
03 - 1 sheet puff pastry, thawed
04 - 2 tablespoons olive oil
05 - 1/2 onion, chopped

# Instructions:

01 - Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
02 - In a skillet, heat 1 tablespoon of olive oil over medium heat; sauté onion until translucent (about 5 minutes).
03 - In a bowl, combine sautéed onion with spinach and feta; mix well.
04 - Roll out puff pastry on a floured surface and cut into 4-inch squares.
05 - Place a spoonful of the spinach-feta mixture in the center of each square, fold diagonally, and seal edges with a fork.
06 - Brush tops with remaining olive oil and bake for 20 minutes or until golden brown.
