Spinach & Feta Patties (Print Version)

# Ingredients:

01 - 2 cups fresh spinach, chopped (or frozen spinach, thawed and drained)
02 - 1 cup crumbled feta cheese
03 - 1 small onion, finely chopped
04 - 2 cloves garlic, minced
05 - 1 egg
06 - 1/2 cup breadcrumbs (use gluten-free breadcrumbs if needed)
07 - 1/4 cup grated Parmesan cheese (optional, for extra flavor)
08 - 1/4 tsp dried oregano
09 - Salt and pepper to taste
10 - 2 tbsp olive oil (1 for greasing, 1 for brushing)

# Instructions:

01 - Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
02 - In a large mixing bowl, combine the chopped spinach, crumbled feta, chopped onion, garlic, egg, breadcrumbs, Parmesan cheese (if using), oregano, salt, and pepper. Mix until all ingredients are well combined and the mixture holds together.
03 - Take small portions of the mixture and shape them into round or oval patties, about 2-3 inches in diameter. Place them on the prepared baking sheet.
04 - Brush the tops of the patties with olive oil to promote browning and create a crispy exterior during baking.
05 - Bake for 20-25 minutes, or until the patties are golden brown and crispy on the outside. Flip the patties halfway through baking to ensure even cooking.
06 - Remove the patties from the oven and let them cool slightly before serving. Serve warm with tzatziki or your favorite dipping sauce.

# Notes:

01 - These patties can be made ahead and refrigerated for up to 2 days before baking.
02 - For a gluten-free version, ensure you use certified gluten-free breadcrumbs.
