Spinach Soup (Palak Soup) (Print Version)

# Ingredients:

→ Base

01 - 1 tablespoon olive oil
02 - 1 bay leaf
03 - 2 garlic cloves, finely chopped
04 - ½ cup sliced onions

→ Main

05 - 2 bunches spinach (palak), washed and stems removed (approx. 260 grams)
06 - ½ teaspoon salt
07 - ½ teaspoon pepper
08 - ½ cup water, divided

→ Finishing

09 - ½ cup milk
10 - 1-2 tablespoons cream

# Instructions:

01 - Heat oil in a soup pot over medium flame. Add garlic and sliced onions and sauté until the onions soften, about 2-3 minutes.
02 - Add spinach, salt, bay leaf and ¼ cup of water. Cover and cook until the spinach wilts, approximately 2-3 minutes. Turn off the heat and allow it to cool.
03 - Remove the bay leaf and transfer the mixture to a blender. Add the remaining ¼ cup of water and blend until smooth.
04 - Return the blended spinach mixture to the pot and bring to a simmer over low flame. Add milk and pepper and simmer for 2 more minutes. Turn off the heat.
05 - Transfer to soup bowls, garnish with cream and serve hot.
