Cajun Steak and Shrimp Alfredo (Print Version)

# Ingredients:

→ For the Steak

01 - 2 whole ribeyes, cut into cubes
02 - 2 tablespoons Cajun seasoning
03 - Beef tallow, as needed for cooking

→ For the Shrimp

04 - 1 pound shrimp, peeled and deveined
05 - 2 tablespoons Cajun seasoning
06 - Beef tallow, as needed for cooking

→ For the Alfredo

07 - 16 ounces penne pasta
08 - 1/2 cup unsalted butter, room temperature
09 - 1/2 cup Romano cheese, grated
10 - 1/2 cup Parmesan cheese, grated
11 - Chopped chives for garnish

# Instructions:

01 - Toss your cubed steak in one bowl and shrimp in another with beef tallow and Cajun seasoning. Make sure everything gets well coated.
02 - Get your grill nice and hot - around 400°F. You want those good searing temperatures.
03 - Throw the seasoned steak cubes on the grill for 3-4 minutes, giving them a flip now and then until they're just how you like them. Set aside to rest.
04 - Heat up some beef tallow in a cast iron skillet on the grill. Cook those shrimp for just 1-2 minutes until they turn pink and curl up.
05 - Cook your penne according to the package, but save a couple ounces of that starchy pasta water for the sauce. Drain the rest.
06 - Spread softened butter in your serving dish, add the hot pasta and toss it around. Mix in both cheeses and that reserved pasta water until you've got a silky, creamy sauce.
07 - Top your creamy pasta with the grilled steak and shrimp, sprinkle with fresh chives, and serve it up hot!

01 - Make your own Cajun seasoning by mixing common spices if you don't have any ready-made
02 - Save some pasta water - it's key for making the sauce creamy
03 - The butter must be room temperature to create a smooth sauce
